maybe have another video discussing how changing the statistics changes the decision of the optimizer and what to look for in the optimizer that would lead us to updaing the statistics

I would have but to concur with the majority (that I see has similar views in my opinion)...
Despite the time limitations imposed (self, or driven by the sponsor), it makes it a worthwhile experience when the person viewing (and therefore trying to imbibe/learn) feels comfortable treading new waters! For example, with SQL Sever 2005 and later, rebuilding indexes is 'allegedly' covering the updates of statistics. How do we sequester these facts/representations and how does it help, say in, running reorganize followed by UPDATE STATISTICS on all tables. The purpose here seems to be lost! Whether it is at the per table level where one needs to tweak because of changes (?), or whether a script to access all the databases within the instance and taking care of updating statistics for each table concerned helps, would actually help in understanding the nuances from the experts in the field, as to when/what to do and the BIG IF...
